Sweet Lor Cheese Spread
Fresh lor cheese, creamily stirred with grape molasses and chopped walnuts as a sweet breakfast spread.

Ingredients · for 4 servings
400 g lor (Turkish fresh cheese, or ricotta)
4 tbsp pekmez (grape molasses)
2 tbsp honey
80 g walnuts
1 tsp cinnamon
1 pinch salt
1 flatbread
Instructions
- Put the lor into a fine sieve and drain for 10 min. so the spread doesn't turn watery later; roughly chop the walnuts.
- Toast the walnuts in a dry pan over medium heat for 3–4 min. until fragrant and lightly browned at the edges, then let cool.
- Mash the drained lor with a fork in a bowl until no large lumps remain, and stir in the pinch of salt.
- Add the pekmez and honey and stir in with a spoon until the mixture shows an even light-brown marbling – don't stir too long, or it becomes runny.
- Fold in two-thirds of the walnuts and chill the spread for 10 min. so it firms up to a spreadable texture again.
- Transfer to a shallow dish, sprinkle with the remaining walnuts and the cinnamon, and serve with fresh flatbread for breakfast.
