Fried Egg on Turkey Ham Bread
Rye bread with butter and turkey ham, topped with a soft fried egg with a runny yolk.

Ingredients · for 2 servings
4 slices rye bread
150 g sliced turkey ham
4 eggs
3 tbsp butter
1/2 bunch chives
1 tsp paprika powder (sweet)
Salt, pepper
Instructions
- Spread the rye bread slices evenly with 2 tbsp softened butter all the way to the edge and place on two plates.
- Lay the turkey ham on the bread in soft folds so the slices gain some height and give the egg something to rest on later.
- Melt the remaining butter in a nonstick pan over medium heat until it foams but stays pale.
- Crack the eggs individually into a cup and gently slide them into the pan so the yolks stay intact.
- Fry the eggs for 3–4 min. over low heat until the white is fully set but the yolk is still runny; do not move the pan.
- Lift one fried egg onto each ham slice, sprinkle with salt, pepper, paprika powder, and chive rings, and serve immediately.
