Sarı Burma (Gathered Walnut Pastry)

Ingredients · for 8 servings
8 yufka sheets
250 g walnuts
200 g butter
400 g sugar
300 ml water
1 tbsp lemon juice
2 tbsp semolina
50 g pistachios
Instructions
- Bring the sugar, water and lemon juice to a boil in a pot and boil uncovered for 10 min. until the syrup is slightly tacky; let cool completely – it must be cold when the pastry comes hot out of the oven.
- Chop the walnuts medium-fine and mix with the semolina so the filling later absorbs the escaping butter steam; melt the butter and keep warm.
- Lay one yufka sheet on the work surface, brush thinly with butter and spread an eighth of the walnut mixture as a narrow strip along the lower edge.
- Loosely roll the sheet around a floured rolling pin, then push the roll together from both ends toward the middle until it gathers like an accordion, and carefully slide it off the pin into a buttered dish.
- Prepare all eight rolls this way, place them tightly next to each other in the dish, pour the remaining butter generously over them and bake at 170 °C for about 45 min. until deep golden and crisp.
- Pour the cold syrup evenly over the hot pastry immediately – it should sizzle audibly –, let steep for at least 3 hrs. and sprinkle with finely chopped pistachios before serving.
