Ingredients · for 8 servings
250 g butter biscuits
200 g dark chocolate
150 g butter
1 can sweetened condensed milk (397 g)
2 tbsp cocoa powder
1 tbsp cognac (or orange juice instead)
100 g walnuts
2 tbsp powdered sugar for dusting
Instructions
- Break the butter biscuits by hand in a freezer bag into coarse, pea-sized pieces – don't crush to a powder, the texture makes the pattern of the log; roughly chop the walnuts.
- Melt the chocolate and butter in a bowl over a hot water bath over low heat for 4–5 min, stirring until smooth, then remove from the water bath.
- Stir in the condensed milk, cocoa powder and cognac until a thick, silky-glossy cream forms, and let it cool for 5 min.
- Fold in the biscuit pieces and walnuts until all the crumbs are coated with cream – the mixture should be moldable, not runny.
- Place the mixture onto a large piece of plastic wrap, shape into a 6 cm thick log, wrap tightly and twist the ends like a candy wrapper; chill for at least 4 hrs.
- Unwrap the firm log, dust with powdered sugar and cut into 1.5 cm thick slices with a large knife rinsed in hot water.
