Ruz bi Foul
Rice with fava beans, plenty of dill and garlic, cooked covered into a fragrant green pilaf.

Ingredients · for 4 servings
300 g long-grain rice
400 g fava beans (fresh or frozen, shelled)
1 bunch dill
4 garlic cloves
1 onion
40 g butter
2 tbsp olive oil
600 ml vegetable stock
Salt, pepper
Instructions
- Wash the rice several times until the water runs clear and drain for 10 min.; pop the fava beans out of their tough skins if needed.
- Finely dice the onion, finely chop the garlic and roughly cut the dill along with the tender stems.
- Heat the butter and olive oil in a wide pot and sauté the onion over medium heat for 5 min. until translucent, then sauté the garlic for 1 min. more.
- Add the beans, toss for 3 min., stir in the drained rice and toast for 1 min. until the grains are glossy.
- Pour in the hot stock, season with salt and pepper, bring to a boil once and let swell covered over the lowest heat for 15 min.
- Fold in the dill, take the pot off the heat and let it rest covered for another 8 min., then fluff loosely and serve warm.
