Griddled Fish with Garlic

Ingredients · for 4 servings
4 firm white fish fillets (about 180 g each)
8 garlic cloves
5 tbsp olive oil
30 g butter
2 limes
1/2 bunch flat-leaf parsley
1/2 bunch cilantro
1 tsp dried oregano
Salt, pepper
Instructions
- Pat the fillets thoroughly dry, season both sides with salt and pepper and let sit at room temperature for 10 min so they cook evenly.
- Slice the garlic paper-thin and finely chop the parsley and cilantro.
- Heat 3 tbsp olive oil in a heavy pan or on the griddle until the oil is just smoking, and place the fillets skin side down.
- Fry without moving for 4 min, until the edges turn white and the skin releases crisply, then flip and finish cooking for 2–3 min, until the flesh flakes.
- Place the fillets on warmed plates, add the butter and remaining olive oil to the pan and fry the garlic for 60–90 sec until pale gold, then stir in the oregano and the juice of one lime.
- Pour the foaming garlic oil over the fillets, sprinkle with parsley and cilantro and serve immediately with the second lime in wedges.
