Fried Eggs with Cheese
Fried eggs with soft yolks, covered with grated Comté in the pan and briefly browned under the grill.

Ingredients · for 2 servings
4 eggs
100 g Comté
20 g butter
2 tbsp cream
1/2 bunch chives
2 slices white bread
Salt, pepper
Instructions
- Finely grate the Comté, cut the chives into rings and preheat the oven grill to 220 °C.
- Melt the butter in a 20 cm ovenproof pan over medium heat, until it foams but hasn't yet browned.
- Crack the eggs one by one into a cup and gently slide them side by side into the pan so the yolks stay intact.
- Fry the eggs for 2 min, until the whites are just set at the edge, then drizzle the cream between the yolks and season lightly with salt and pepper.
- Sprinkle the cheese around the whites, leaving the yolks uncovered, and slide the pan under the grill for 2-3 min, until the cheese has melted and turned golden in patches.
- Toast the white bread, bring the pan straight to the table, sprinkle with chives and scoop up the eggs with the bread while still hot.
