Ingredients · for 4 servings
400 g wheat flour
100 g fine semolina
1 tsp salt
1 tsp sugar
280 ml lukewarm water
100 ml oil
80 g soft butter
Honey for serving
Instructions
- Knead the flour, 50 g of the semolina, salt, sugar and water for 10 min into a very smooth, soft dough.
- Divide into 8 balls, brush with oil and rest for 15 min.
- Stretch each ball out paper-thin on an oiled work surface, until the dough is almost see-through.
- Brush with butter, sprinkle with a little semolina and fold like a letter into a square.
- Flatten each square and fry in the hot pan with a little oil, 2–3 min per side until golden brown.
- Press briefly between your palms – this separates the layers.
- Serve warm with melted butter and honey – with mint tea on the side.
