Moroccan Kefta Skewers
Spiced ground lamb with parsley and cumin shaped onto skewers and briefly grilled over charcoal.

Ingredients · for 4 servings
600g ground lamb
1 onion
1/2 bunch parsley
1/2 bunch coriander (cilantro)
2 tsp cumin
1 tsp sweet paprika
1/2 tsp cinnamon
1/2 tsp chili flakes
2 tbsp olive oil
1 lemon
8 wooden skewers
Salt, pepper
Instructions
- Grate the onion very finely and lightly press out the juice, finely chop the parsley and coriander, and soak the wooden skewers in water for 15 minutes.
- Knead the ground lamb vigorously with the onion, herbs, cumin, paprika, cinnamon, chili flakes, salt and pepper for 3 minutes until the mixture holds together.
- Chill the mixture for 15 minutes – cold, it is much easier to shape and holds together better on the skewer.
- With damp hands, press a portion of the mixture around each skewer and shape it into an evenly long, finger-thick roll.
- Brush the skewers thinly with olive oil and turn over medium coals or in a grill pan for 8–10 minutes until browned all over and juicy inside.
- Serve immediately with lemon wedges – flatbread and a salad of tomatoes and red onions make a great accompaniment.
