Machaca con Huevo
Dried shredded beef from northern Mexico fried with onion, tomato and serrano, then set into soft curds with scrambled eggs.

Ingredients · for 2 servings
120 g machaca (dried shredded beef)
6 eggs
1 white onion
2 ripe tomatoes
2 serrano chiles
3 tbsp oil
4 corn tortillas
Salt, pepper
Instructions
- Cover the machaca with warm water in a bowl, soak for 10 min., squeeze out well, and loosen the fibers with your fingers.
- Finely dice the onion, seed and dice the tomatoes, and slice the serrano chiles into thin rings.
- Heat the oil in a nonstick pan and sauté the onion and chiles over medium heat for 3–4 min., until translucent.
- Add the machaca and fry for 3 min., until the fibers turn crisp at the edges, then stir in the tomatoes and simmer for 2 min.
- Whisk the eggs, season lightly with salt and pepper, pour over the meat mixture, and let set slowly over low heat, stirring with a spoon, into soft curds.
- Remove from the heat while the mixture still looks moist and glossy, and serve with warm corn tortillas.
