Menemen with Lor Cheese

Ingredients · for 4 servings
4 eggs
200 g lor cheese (or ricotta instead)
4 tomatoes
2 green pointed peppers
3 tbsp olive oil
1 tsp pul biber (Aleppo pepper)
1/2 bunch dill
1 flatbread
Salt, pepper
Instructions
- Seed the pointed peppers and cut into fine strips, peel and dice the tomatoes, finely chop the dill; loosen the lor cheese with a fork.
- Warm the olive oil in a pan over medium heat and fry the peppers for 4–5 min. until soft and translucent.
- Add the tomatoes, salt and simmer uncovered for 6–8 min. until a thick sauce has formed that releases hardly any liquid.
- Whisk the eggs, pour over the sauce and let set slowly over low heat for 2 min. until just barely set.
- Remove the pan from the heat and fold in the lor cheese in rough spoonfuls — stir only briefly so white pockets remain visible and the cheese doesn't break down.
- Sprinkle with pul biber, pepper and dill and serve immediately with flatbread.
