Ingredients · for 4 servings
4 eggs
300 g ground beef
4 tomatoes
2 green pointed peppers
1 onion
3 tbsp olive oil
1 tsp pul biber (Aleppo pepper)
1/2 bunch parsley
Salt, pepper
Instructions
- Finely dice the onion, seed the pointed peppers and cut into narrow strips, peel and roughly dice the tomatoes; chop the parsley.
- Heat the olive oil in a large pan and fry the ground beef over high heat for 5–6 min. until crumbly, browned all over and the juices have evaporated.
- Add the onion and peppers and cook for a further 4–5 min. until the peppers are soft and translucent.
- Add the tomatoes, season with salt and pepper and simmer uncovered for 8–10 min. until a thick sauce forms that releases hardly any more liquid.
- Reduce the heat to low, crack the eggs individually into wells in the sauce and only fold through once or twice; let set for 2 min.
- Sprinkle with pul biber and parsley and serve immediately in the pan with flatbread.
