Menemen with Ground Beef

Instructions

  1. Finely dice the onion, seed the pointed peppers and cut into narrow strips, peel and roughly dice the tomatoes; chop the parsley.
  2. Heat the olive oil in a large pan and fry the ground beef over high heat for 5–6 min. until crumbly, browned all over and the juices have evaporated.
  3. Add the onion and peppers and cook for a further 4–5 min. until the peppers are soft and translucent.
  4. Add the tomatoes, season with salt and pepper and simmer uncovered for 8–10 min. until a thick sauce forms that releases hardly any more liquid.
  5. Reduce the heat to low, crack the eggs individually into wells in the sauce and only fold through once or twice; let set for 2 min.
  6. Sprinkle with pul biber and parsley and serve immediately in the pan with flatbread.
