Ingredients · for 4 servings

Instructions

  1. Tear the flatbreads into irregular pieces about 4 cm across – torn edges turn crisper than cut ones.
  2. Toast the sesame seeds in a dry pan over medium heat for 2 min. until fragrant and light brown, and immediately tip onto a plate.
  3. Finely grate the garlic and let it sizzle gently in 4 tbsp olive oil in the same pan over medium heat for 30 sec. without taking on color.
  4. Add the bread pieces and toast for 5–7 min., turning frequently, until golden brown all over and crisp throughout.
  5. Remove the pan from the heat, add the remaining olive oil, zaatar, sumac and the toasted sesame and toss vigorously so the spices cling to the warm oil.
  6. Season with a little salt and serve lukewarm in a shallow dish – classic for breakfast or as an accompaniment to soups.
