Kefta bel Matisha

Ingredients · for 4 servings
500 g ground beef
600 g ripe tomatoes
1 onion
2 cloves garlic
2 tsp ground cumin
1 tsp paprika (sweet)
1 tsp chili flakes
1 bunch cilantro
1 lemon
3 tbsp olive oil
Salt, pepper
Instructions
- Score the tomatoes crosswise, blanch for 20 seconds, peel, seed, and cut into fine cubes; chop the cilantro.
- Mix the tomato cubes with half the cilantro, one pressed clove of garlic, the juice of half a lemon, 2 tbsp olive oil, salt, and pepper, and chill.
- Finely grate the onion, squeeze out lightly, and knead vigorously for 3 minutes with the ground beef, the remaining garlic, 1 tsp cumin, paprika, chili flakes, the remaining cilantro, salt, and pepper.
- Chill the mixture for 20 minutes, then divide into twelve portions and shape each around a flat skewer into a roll about 10 cm long.
- Bring the grill to medium-high heat and grill the rolls for 8–10 minutes, turning several times, until browned outside and just cooked through inside.
- Sprinkle the skewers with the remaining cumin and serve with the cold tomato concassé and lemon wedges.
