Kaşarlı Tost
Golden-brown pressed cheese toast with plenty of kaşar, served with pickles and ayran.

Ingredients · for 2 servings
4 slices toast bread
200 g kaşar cheese
30 g butter
1 tsp oregano
1/2 tsp pul biber (Aleppo pepper)
150 g pickled vegetables (turşu)
400 ml ayran
Instructions
- Coarsely grate the kaşar cheese or cut into 3 mm thin slices and let the butter soften at room temperature.
- Preheat the contact grill or a heavy pan over medium heat – the cheese should melt before the bread burns.
- Thinly butter the outsides of the bread slices, top two slices generously with the cheese and sprinkle with oregano and pul biber.
- Place the remaining slices on top, press lightly and put in the contact grill; without a grill, weigh the toasts down flat in the pan with a heavy pot bottom.
- Cook for 5–6 min. until the bread is deep golden brown and pressed flat and the cheese oozes and strings at the edges.
- Halve the toasts diagonally and serve immediately with turşu and ice-cold ayran.
