Mashed Potatoes with Crispy Onions

Creamy mashed potatoes made with butter and warm milk, crowned with homemade golden-brown fried onion rings.

Instructions

  1. Peel the potatoes, cut into equal-sized pieces and cook in salted water for 20–25 min. until soft; meanwhile cut the onions into thin rings.
  2. Toss the onion rings with the flour in a bowl until lightly coated, then tap off the excess flour in a sieve.
  3. Heat the oil in a pan and deep-fry the rings in batches for 3–4 min. until golden brown, then drain on paper towels and salt lightly.
  4. Warm the milk with the butter until the butter has melted but the milk does not boil.
  5. Drain the potatoes, let them steam off briefly, press through a ricer and gradually stir in the hot butter-milk with a wooden spoon, until the mash is creamy and glossy.
  6. Season with salt, pepper and nutmeg, spoon into deep plates and sprinkle with the crispy fried onions.
