Mashed Potatoes with Crispy Onions
Creamy mashed potatoes made with butter and warm milk, crowned with homemade golden-brown fried onion rings.

Ingredients · for 4 servings
1 kg floury potatoes
250 ml milk
80 g butter
3 onions
2 tbsp flour
4 tbsp vegetable oil
1 pinch nutmeg
Salt, pepper
Instructions
- Peel the potatoes, cut into equal-sized pieces and cook in salted water for 20–25 min. until soft; meanwhile cut the onions into thin rings.
- Toss the onion rings with the flour in a bowl until lightly coated, then tap off the excess flour in a sieve.
- Heat the oil in a pan and deep-fry the rings in batches for 3–4 min. until golden brown, then drain on paper towels and salt lightly.
- Warm the milk with the butter until the butter has melted but the milk does not boil.
- Drain the potatoes, let them steam off briefly, press through a ricer and gradually stir in the hot butter-milk with a wooden spoon, until the mash is creamy and glossy.
- Season with salt, pepper and nutmeg, spoon into deep plates and sprinkle with the crispy fried onions.
