Celeriac and Apple Salad
Northern Italian salad of finely shaved celeriac with tart apple, walnuts and a lemon-mustard dressing.

Ingredients · for 4 servings
1 celeriac (approx. 700 g)
2 tart apples
100 g walnuts
2 lemons
1 tbsp Dijon mustard
5 tbsp olive oil
150 g sour cream
1/2 bunch flat-leaf parsley
Salt, pepper
Instructions
- Peel the celeriac generously, cut into thin slices and then into fine strips, then immediately toss with the juice of one lemon so it doesn't brown.
- Quarter the apples with the skin on, core them, and cut into fine strips as well; fold into the celeriac.
- Coarsely chop the walnuts and toast in a dry pan over medium heat for 3 min. until fragrant, then let cool.
- For the dressing, whisk the Dijon mustard with the juice of the second lemon, salt and pepper, and slowly whisk in the olive oil until a creamy sauce forms.
- Stir in the sour cream, pour the dressing over the celeriac and apple, and mix thoroughly; let sit for 15 min.
- Just before serving, fold in the walnuts and coarsely chopped parsley, and arrange the salad well chilled on flat plates.
