White Bean and Red Onion Salad
A Tuscan salad of white beans with mild Tropea onions, sage and plenty of green olive oil.

Ingredients · for 4 servings
500 g white beans (from a jar)
1 red onion (Tropea onion)
4 sage leaves
6 tbsp olive oil
2 tbsp red wine vinegar
1 clove garlic
1/2 bunch flat-leaf parsley
Salt, pepper
Instructions
- Drain the beans, rinse under cold water and let drain gently without crushing them.
- Cut the Tropea onion into fine rings and marinate with the red wine vinegar and a pinch of salt for 15 min. until soft and mild.
- Halve the garlic and rub the cut side firmly over the inside of the salad bowl, then discard the clove.
- Warm 2 tbsp olive oil in a small pan and let the sage leaves infuse over low heat for 1 min. until the oil is fragrant; let cool.
- Toss the beans, marinated onions with their vinegar, the sage oil and the remaining olive oil loosely together in the bowl and season with salt and plenty of pepper.
- Let sit for at least 15 min., sprinkle with chopped parsley and serve at room temperature with toasted bread.
