Huevos con Nopales
Cactus strips fried with onion and serrano chili, set into a savory scramble with beaten eggs.

Ingredients · for 2 servings
300g nopales (jarred cactus paddles)
6 eggs
1 white onion
2 serrano chilies
2 ripe tomatoes
3 tbsp oil
1/2 bunch cilantro
4 corn tortillas
Salt, pepper
Instructions
- Drain the nopales, rinse thoroughly under running water until the slimy liquid is gone, and cut into 1cm-wide strips.
- Cut the onion into thin half-rings, the serrano chilies into thin rings, and dice the deseeded tomatoes.
- Heat the oil hard in a wide pan and fry the nopales for 5–6 min., until the liquid has evaporated and the edges take on color.
- Add the onion and chilies and cook for another 3 min., then stir in the tomatoes and let them collapse for 2 min.
- Beat the eggs, season with salt and pepper, and pour in over low heat, stirring slowly, until just set into soft curds.
- Sprinkle with chopped cilantro and serve with warm corn tortillas.
