Huevos con Nopales

Instructions

  1. Drain the nopales, rinse thoroughly under running water until the slimy liquid is gone, and cut into 1cm-wide strips.
  2. Cut the onion into thin half-rings, the serrano chilies into thin rings, and dice the deseeded tomatoes.
  3. Heat the oil hard in a wide pan and fry the nopales for 5–6 min., until the liquid has evaporated and the edges take on color.
  4. Add the onion and chilies and cook for another 3 min., then stir in the tomatoes and let them collapse for 2 min.
  5. Beat the eggs, season with salt and pepper, and pour in over low heat, stirring slowly, until just set into soft curds.
  6. Sprinkle with chopped cilantro and serve with warm corn tortillas.
