Hasan Pasha Köfte

Ingredients · for 4 servings
600 g ground beef
1 onion
1 egg
2 tbsp breadcrumbs
800 g floury potatoes
50 g butter
100 ml milk
150 g kaşar cheese
400 g passata
1 tbsp tomato paste
Salt, pepper
Instructions
- Peel the potatoes, cut into chunks and boil in salted water for 20–25 min. until soft; meanwhile finely grate the onion and preheat the oven to 200°C.
- Knead the ground beef with onion, egg, breadcrumbs, salt and pepper for 3–4 min., shape into 8 thick patties and place in a greased baking dish.
- Drain the cooked potatoes, let steam off briefly, and mash with butter and hot milk into a firm, pipeable purée; season generously with salt.
- Fill the purée into a piping bag and pipe a tall dome onto each meat patty; alternatively spoon it on and rake with a fork.
- Stir the passata with tomato paste, salt and pepper and pour between the nests in the dish so the domes stay dry.
- Sprinkle with grated kaşar cheese and bake for 30–35 min. until the potato tips are golden brown and the sauce bubbles at the edges; serve straight from the dish.
