Guacamole Taquero
A thin, pourable avocado sauce with cooked tomatillos, serrano and cilantro, meant to be spooned over tacos.

Ingredients · for 6 servings
2 avocados
300 g tomatillos
3 serrano chiles
2 cloves garlic
1/2 white onion
1/2 bunch cilantro
1 lime
100 ml water
1 tsp salt
Instructions
- Remove the papery husks from the tomatillos, wash them and cook with the serrano chiles, garlic and onion half in 400 ml water for 6–8 min. until the tomatillos turn from bright green to olive green and are soft.
- Lift out the vegetables with a slotted spoon and let cool for 5 min.; discard the cooking water.
- Halve the avocados, remove the pits and scoop out the flesh with a spoon.
- Blend the avocado, cooked vegetables, cilantro, salt and 100 ml fresh water in a blender for 30–40 sec. until a very fine, bright green, pourable sauce forms.
- Season with the juice of half a lime and adjust the consistency with a little water so the sauce runs off a spoon in a thin stream.
- Fill into a squeeze bottle or small pitcher and drizzle immediately over tacos, tostadas or grilled meat.
