Green Spelt Soup
Cracked green spelt simmers tender in vegetable stock and is puréed creamy with onion, cream and parsley.

Ingredients · for 4 servings
150 g cracked green spelt
1 onion
1 carrot
100 g celery root
2 tbsp butter
1 l vegetable stock
150 ml cream
1 pinch nutmeg
1/2 bunch parsley
Salt, pepper
Instructions
- Finely dice the onion, carrot and celery root, and briefly rinse the cracked green spelt in a sieve under cold water.
- Melt the butter in a pot and sweat the vegetables over medium heat for 5 min. without letting them take on color.
- Add the cracked green spelt and toast along for 2 min. until it smells distinctly nutty.
- Pour in the vegetable stock and simmer the soup over gentle heat for 25 min. until the spelt is completely soft.
- Purée everything finely with an immersion blender, stir in the cream and season with salt, pepper and nutmeg.
- Reheat briefly without boiling, ladle into bowls and serve sprinkled with chopped parsley.
