Instructions

  1. Coarsely chop the pecans and toast in a dry pan over medium heat for 3–4 min, until fragrant, then let cool on a plate.
  2. Warm the milk, sugar and a pinch of salt in a tall, wide pot, stirring, until the sugar has dissolved, then stir in the baking soda dissolved in the water off the heat.
  3. Simmer the mixture uncovered over medium heat for 50–60 min, stirring down to the bottom increasingly often, until it's deep brown and very thick.
  4. Do the test: a drop in cold water must instantly set into a soft, moldable ball – only then is the mixture ready.
  5. Remove the pot from the heat, stir in the vanilla extract and pecans, and spread the mixture on a sheet buttered beforehand; let cool for 45 min.
  6. With lightly oiled hands, form walnut-sized balls, press slightly flat and wrap each in a small piece of parchment paper.
