Molten Chocolate Cake
Very moist chocolate cake with little flour, whose center still runs soft when cut.

Ingredients · for 6 servings
200 g dark chocolate
150 g butter
150 g sugar
4 eggs
60 g flour
1 pinch salt
1 tbsp cocoa powder
20 g soft butter
2 tbsp powdered sugar for dusting
Instructions
- Roughly chop the chocolate and melt with 150 g butter over a water bath on low heat for 5 min., stir smooth and let cool to hand-warm.
- Preheat the oven to 180°C (350°F) top/bottom heat, grease a 22 cm springform pan with the soft butter and dust with the cocoa powder.
- Beat the eggs with the sugar and salt for 4 min. until very pale and thick, until the mixture forms a ribbon when the whisk is lifted.
- Fold in the lukewarm chocolate butter in two portions, then finally fold in the sifted flour with a spatula only until no streaks remain.
- Pour the batter into the pan and bake for 18–20 min. – the edge should be firm, but the center should still clearly wobble when shaken; don't bake longer or the liquid core will be lost.
- Let the cake rest in the pan for 10 min., loosen carefully, dust with powdered sugar and serve lukewarm.
