700g ground beef
1 stale bread roll
1 onion
1 egg
4 eggs for the filling
1 tbsp medium-hot mustard
1 tsp paprika
2 carrots
2 tbsp oil
300ml beef broth
150ml cream
Salt, pepper
Instructions
- Hard-boil the four eggs for the filling for 10 min., rinse in cold water and peel; soak the bread roll in lukewarm water.
- Finely dice the onion, squeeze out the bread roll well and knead both firmly with the ground beef, the raw egg, mustard, paprika, salt and pepper.
- Shape half the mixture into a flat loaf on a baking sheet, line up the boiled eggs on top and enclose them snugly with the remaining mixture.
- Cut the carrots into batons, scatter them around the loaf with the oil, and bake everything in the preheated oven at 190°C for 30 min.
- Pour in the broth and bake for another 30 min., basting twice with the pan juices, until the loaf is glossy dark brown on the outside.
- Bring the pan drippings to a boil with the cream, season to taste, and serve the loaf cut into finger-thick slices with the sauce.
