German Meatloaf

Ground beef with soaked bread roll and mustard, shaped into a loaf, filled with hard-boiled eggs and roasted in the oven.

Instructions

  1. Hard-boil the four eggs for the filling for 10 min., rinse in cold water and peel; soak the bread roll in lukewarm water.
  2. Finely dice the onion, squeeze out the bread roll well and knead both firmly with the ground beef, the raw egg, mustard, paprika, salt and pepper.
  3. Shape half the mixture into a flat loaf on a baking sheet, line up the boiled eggs on top and enclose them snugly with the remaining mixture.
  4. Cut the carrots into batons, scatter them around the loaf with the oil, and bake everything in the preheated oven at 190°C for 30 min.
  5. Pour in the broth and bake for another 30 min., basting twice with the pan juices, until the loaf is glossy dark brown on the outside.
  6. Bring the pan drippings to a boil with the cream, season to taste, and serve the loaf cut into finger-thick slices with the sauce.
