Apple Puff Pastry Parcels

Ingredients · for 4 servings
1 sheet puff pastry
3 tart apples
60 g raisins
60 g brown sugar
1 tsp cinnamon
1 tbsp lemon juice
20 g butter
1 egg, for brushing
2 tbsp coarse sugar
Instructions
- Soak the raisins in lukewarm water for 15 min., then squeeze out well, and preheat the oven to 200°C.
- Peel and core the apples and cut into 1 cm cubes, mixing them immediately with the lemon juice so they don't brown.
- Melt the butter in a pan, sauté the apple cubes with brown sugar and cinnamon over medium heat for 4–5 min. until soft but still holding shape, then fold in the raisins and let cool.
- Roll out the puff pastry and cut into eight squares of about 12 cm.
- Place 1 tbsp of the cooled filling in the centre of each, fold the corners to the middle and press firmly together; brush the parcels with beaten egg and sprinkle with coarse sugar.
- Bake on a baking sheet lined with parchment paper for 18–20 min. until well risen and deep golden brown, and serve lukewarm.
