Apple Puff Pastry Parcels

Instructions

  1. Soak the raisins in lukewarm water for 15 min., then squeeze out well, and preheat the oven to 200°C.
  2. Peel and core the apples and cut into 1 cm cubes, mixing them immediately with the lemon juice so they don't brown.
  3. Melt the butter in a pan, sauté the apple cubes with brown sugar and cinnamon over medium heat for 4–5 min. until soft but still holding shape, then fold in the raisins and let cool.
  4. Roll out the puff pastry and cut into eight squares of about 12 cm.
  5. Place 1 tbsp of the cooled filling in the centre of each, fold the corners to the middle and press firmly together; brush the parcels with beaten egg and sprinkle with coarse sugar.
  6. Bake on a baking sheet lined with parchment paper for 18–20 min. until well risen and deep golden brown, and serve lukewarm.
