Eggs in a Glass

Two soft-boiled eggs, spooned from the shell into a glass and stirred with butter, salt and chives.

Instructions

  1. Take the eggs out of the fridge 30 min. before cooking so they don't crack, and rinse two glasses with hot water to warm them.
  2. Bring plenty of water to a simmer in a small pot and carefully slide the eggs in with a spoon.
  3. Cook the eggs at a bare simmer for exactly 5–6 min. – the white will just be set while the yolk stays soft and golden.
  4. Immediately rinse the eggs under cold water for 30 sec. so they stop cooking but stay warm inside.
  5. Crack each egg all the way round at the wider end, spoon the contents out of the shell into the warmed glass with a teaspoon and remove any bits of shell.
  6. Dot 1 tbsp of butter over each, season with salt, pepper and nutmeg, sprinkle with chives and serve with toasted bread.
