Eggs in a Glass
Two soft-boiled eggs, spooned from the shell into a glass and stirred with butter, salt and chives.

Ingredients · for 2 servings
4 eggs
2 tbsp butter
4 slices bread
1/2 bunch chives
1 pinch nutmeg
Salt, pepper
Instructions
- Take the eggs out of the fridge 30 min. before cooking so they don't crack, and rinse two glasses with hot water to warm them.
- Bring plenty of water to a simmer in a small pot and carefully slide the eggs in with a spoon.
- Cook the eggs at a bare simmer for exactly 5–6 min. – the white will just be set while the yolk stays soft and golden.
- Immediately rinse the eggs under cold water for 30 sec. so they stop cooking but stay warm inside.
- Crack each egg all the way round at the wider end, spoon the contents out of the shell into the warmed glass with a teaspoon and remove any bits of shell.
- Dot 1 tbsp of butter over each, season with salt, pepper and nutmeg, sprinkle with chives and serve with toasted bread.
