Dorayaki
Two fluffy honey pancakes filled with sweet bean paste – the favorite snack of whole generations.

Ingredients · for 4 servings
2 eggs
70 g sugar
2 tbsp honey
130 g flour
1 tsp baking powder
3 tbsp water
200 g sweet red bean paste (anko)
1 tbsp oil
Instructions
- Beat the eggs, sugar and honey until foamy.
- Sift the flour and baking powder over the top and stir in the water to make a thick, smooth batter; let rest for 10 min.
- Oil a non-stick pan very thinly over medium heat and wipe out almost all of the oil again – this way the pancakes turn evenly golden brown.
- Pour a small ladleful of batter for each pancake and cook until bubbles rise to the surface; flip and finish cooking for 1 min.
- Keep all the pancakes soft under a kitchen towel.
- Fill two pancakes at a time with a thick dollop of anko and press the edges lightly together – enjoy warm or cold.
