Chicken Jalfrezi

600 g chicken breast fillets
1 red bell pepper
1 green bell pepper
2 onions
3 tomatoes
2 green chilies
1 tbsp ginger-garlic paste
1 tsp turmeric
1 tsp Kashmiri chili powder
1 tsp garam masala
4 tbsp oil

Instructions
- Cut the chicken into finger-thick strips, cut the peppers and onions into strips of the same width, halve the chilies lengthwise and dice the tomatoes.
- Heat 3 tbsp oil until very hot in a large pan and sear the chicken strips for 4–5 minutes until browned all over, then remove.
- In the remaining oil, fry the onions and peppers over high heat for 3 minutes — they should brown at the edges but stay crisp — and set aside as well.
- Fry the ginger-garlic paste and chilies for 1 minute, add turmeric and chili powder, stir in the tomatoes and reduce for 6–8 minutes until a thick, almost dry mass forms.
- Return the chicken and vegetables to the pan, season with salt and stir-fry over high heat for 3–4 minutes until everything is glossy and the pan is dry.
- Sprinkle with garam masala, toss briefly, and serve immediately with roti or rice.
