Butter Beans with Summer Savory
Green beans cooked al dente with summer savory and tossed in browned butter with shallots.

Ingredients · for 4 servings
800 g green beans
2 sprigs summer savory
2 shallots
60 g butter
1 tsp lemon juice
1 pinch sugar
Salt, pepper
Instructions
- Wash the beans, trim the ends and halve any long pods; cut the shallots into fine dice.
- Bring plenty of salted water with one sprig of summer savory and the pinch of sugar to a boil and cook the beans uncovered for 8–10 min. until al dente.
- Drain the beans, immediately plunge into ice-cold water and drain well – this keeps their vivid green color.
- Melt the butter in a wide pan over medium heat for 2–3 min. until it smells nutty and turns light brown.
- Sauté the shallots in it for 2 min., add the beans and toss for 3–4 min. until coated in butter.
- Finely strip the leaves from the second sprig of summer savory, fold in, season with salt, pepper and lemon juice, and serve immediately.
