Butter Beans with Summer Savory

Green beans cooked al dente with summer savory and tossed in browned butter with shallots.

Instructions

  1. Wash the beans, trim the ends and halve any long pods; cut the shallots into fine dice.
  2. Bring plenty of salted water with one sprig of summer savory and the pinch of sugar to a boil and cook the beans uncovered for 8–10 min. until al dente.
  3. Drain the beans, immediately plunge into ice-cold water and drain well – this keeps their vivid green color.
  4. Melt the butter in a wide pan over medium heat for 2–3 min. until it smells nutty and turns light brown.
  5. Sauté the shallots in it for 2 min., add the beans and toss for 3–4 min. until coated in butter.
  6. Finely strip the leaves from the second sprig of summer savory, fold in, season with salt, pepper and lemon juice, and serve immediately.
