Bulgur Çorbası
Simple bulgur soup with tomato paste and onion, finished with hot mint butter.

Ingredients · for 4 servings
120 g bulgur
1 onion
2 garlic cloves
1 tbsp tomato paste
3 tbsp butter
1.2 l vegetable stock
1 tbsp dried mint
1 tsp Aleppo pepper
Salt, pepper
Instructions
- Rinse the bulgur in a sieve under cold water and drain; finely dice the onion and finely chop the garlic.
- Melt 1 tbsp butter in a pot and sauté the onion with garlic over medium heat for 4–5 min. until soft, without browning.
- Add the tomato paste and cook for 1 min. until it darkens and smells nutty.
- Stir in the bulgur, toast briefly, then add the vegetable stock and bring to a boil.
- Simmer uncovered over low heat for 15–18 min. until the bulgur is fully soft and the soup thickens; season with salt and pepper.
- Melt the remaining butter, let the mint and Aleppo pepper infuse in it for 30 sec. and spoon over the bowls.
