Ingredients · for 4 servings
500 g okra pods (fresh or frozen)
3 tbsp white wine vinegar
2 onions
4 ripe tomatoes
2 tbsp tomato paste
120 ml olive oil
1 lemon
1/2 bunch parsley
1 tsp sugar
Salt, pepper
Instructions
- Trim the stem ends of the okra into a cone shape without opening the pod, then mix with the vinegar and 1 tsp salt and let stand for 30 min. — this removes their sliminess.
- Preheat the oven to 180°C top/bottom heat, cut the onions into fine half-rings and peel and dice the tomatoes.
- Rinse the okra briefly, drain well and spread with the onions in a wide baking dish.
- Stir the tomato paste with 150 ml water, the sugar, salt and pepper, pour over the vegetables together with the diced tomatoes and drizzle with the olive oil.
- Bake uncovered for 45–50 min. until the okra is soft and the surface lightly browned; after 25 min. gently shake the dish once without stirring the pods.
- Drizzle with the juice of half a lemon, sprinkle with chopped parsley and serve lukewarm with the remaining lemon wedges.
