Vanilla Pudding with Cherries
Homemade vanilla pudding made from a real vanilla pod, chilled and topped with thickened sour cherries.

Ingredients · for 4 servings
700 ml whole milk
1 vanilla pod
80 g sugar
45 g cornstarch
3 egg yolks
1 pinch salt
500 g pitted sour cherries (frozen or jarred)
2 tbsp sugar for the cherries
1 tbsp cornstarch for the cherries
Instructions
- Slit the vanilla pod lengthwise, scrape out the seeds and slowly bring both to a boil with 600 ml of the milk, 80 g sugar and a pinch of salt, then let steep for 10 min.
- Whisk the 45 g cornstarch with the remaining cold milk and the egg yolks until lump-free.
- Remove the vanilla pod, bring the milk back to a boil, pour in the starch mixture while stirring vigorously and boil hard for 1 min, until the pudding falls thickly from the spoon.
- Pour the pudding into four bowls, cover the surface directly with plastic wrap to prevent a skin from forming, and chill for at least 3 hours.
- Bring the sour cherries to a boil with their juice and 2 tbsp sugar, mix the remaining 1 tbsp cornstarch with 2 tbsp water, stir in and cook for 1 min until the sauce is clear and syrupy.
- Let the cherry sauce cool completely and pour over the set pudding just before serving.
