Tomato Salad with Onions
Ripe tomato slices briefly marinated with red onion rings, white wine vinegar, oil and plenty of chives.

Ingredients · for 4 servings
800 g ripe tomatoes
1 red onion
3 tbsp white wine vinegar
5 tbsp olive oil
1 tsp medium-hot mustard
1 pinch sugar
1 bunch chives
Salt, pepper
Instructions
- Wash the tomatoes, cut out the stem end in a wedge and slice the fruit about 5 mm thin.
- Peel the red onion, slice into paper-thin rings and soak them in cold water for 5 min. to mellow their sharpness, then drain well.
- Whisk vinegar, mustard, sugar, salt and pepper until the salt dissolves, then slowly whisk in the olive oil until the marinade lightly emulsifies.
- Arrange the tomato slices overlapping like roof tiles on a flat platter, salt lightly and scatter the onion rings over the top.
- Drizzle the marinade evenly over the top and let the salad sit for 10 min. at room temperature, so the tomatoes release juice and mingle with the dressing.
- Cut the chives into fine rings, scatter over the salad and serve with fresh bread for dipping.
