Ingredients · for 8 servings
200 g flour
3 eggs
500 ml water
1 pinch salt
200 g walnuts
400 g sugar
300 ml water
1 tbsp lemon juice
3 tbsp butter
Instructions
- First make the syrup: bring 400 g sugar with 300 ml water to a boil, add the lemon juice and simmer uncovered for 10 min., then let cool completely.
- Whisk flour, eggs, 500 ml water and a pinch of salt into a very thin, smooth batter and let rest for 15 min. so the flour can swell.
- Finely chop the walnuts, but do not grind them — small pieces should still be visible.
- Grease a nonstick pan lightly with butter and bake 8–10 paper-thin pancakes from the batter one after another over medium heat, about 1 min. per side, until only lightly speckled.
- Stack the pancakes in a shallow dish, brushing each layer thinly with butter and sprinkling with walnuts; only butter the top layer.
- Pour the cold syrup evenly over the warm stack, let soak for 30 min., cut into diamonds and serve sprinkled with the remaining walnuts.
