Grilled Squid
Whole squid marinated in fish sauce and pepper, grilled over charcoal and served with a fiery lime-garlic sauce.

Ingredients · for 4 servings
800g small squid (cleaned)
3 tbsp fish sauce
1 tsp white pepper
2 tbsp oil
5 garlic cloves
5 Thai chillies
4 tbsp lime juice
1 tbsp palm sugar
1 bunch coriander
1 cucumber
Instructions
- Rinse the squid inside and out, pat very dry and score the outside of the tubes in a shallow diamond pattern with a sharp knife.
- Toss with 2 tbsp fish sauce, the white pepper and the oil, cover and marinate for 20 minutes.
- For the dipping sauce, pound the garlic, Thai chillies and coriander stems in a mortar, then stir in the lime juice, palm sugar and the remaining fish sauce.
- Get a charcoal grill to a strong glow, or heat a grill pan hot, and grill the squid for 2–3 minutes per side until they curl and show dark char marks.
- Remove from the grill immediately and cut into bite-sized rings – grilled any longer they turn tough and rubbery.
- Arrange on a platter with cucumber slices and coriander leaves and serve with the dipping sauce.
