Pişi (Fried Yeast Flatbread)

Instructions

  1. Dissolve the yeast and sugar in the lukewarm water and let stand for 10 min. until foam forms.
  2. Add flour, salt and yogurt and knead for 6–8 min. into a soft, slightly sticky dough; cover and let rise in a warm place for 60 min. until it visibly bubbles.
  3. With oiled hands, place the dough on a floured surface, divide into 12 pieces and flatten each into a roughly 1 cm thick disc the size of a palm.
  4. Heat the frying oil to 170 °C – a small piece of dough must rise immediately and bubble without darkening.
  5. Fry the flatbreads in batches 1.5–2 min. per side until they puff up and turn golden brown, then drain on paper towels.
  6. Arrange still warm on a plate and serve for breakfast with the crumbled white cheese and the honey.
