Mara Pad Khai
Bitter melon slices fried with plenty of garlic and coated in egg – bitter, savory and ready in 20 minutes.

Ingredients · for 2 servings
1 bitter melon (approx. 400 g)
4 eggs
4 garlic cloves
2 tbsp light soy sauce
1/2 tsp sugar
1/2 tsp white pepper
3 tbsp oil
1 tsp salt
Instructions
- Halve the bitter melon lengthwise, thoroughly scrape out the white pith with a spoon and cut the halves into 4 mm thin half-moons.
- Mix the slices with the salt, let sit for 10 min., rinse with cold water and squeeze out well – this way the melon loses some of its bitterness.
- Finely chop the garlic and fry in the hot oil for 30 seconds until fragrant but still pale.
- Add the bitter melon and fry over high heat for 4–5 min. until the slices are browned at the edges but still tender-crisp in the middle.
- Beat the eggs with the soy sauce, sugar and white pepper, pour evenly over the vegetables and let set for 1 min. without stirring.
- Turn everything over once roughly, let set for another 1–2 min. and serve immediately from the pan.
