Gingerbread

Soft spiced gingerbread on wafers with honey, nuts and a citrus note, coated in a thin sugar glaze.

Instructions

  1. Melt the honey, brown sugar and butter in a pot over low heat for 3–4 min. until clear, then let cool to lukewarm.
  2. Mix the flour, ground almonds, gingerbread spice, baking powder and salt, finely chop the walnuts and finely grate the orange zest.
  3. Stir the eggs one at a time into the lukewarm honey mixture, then work in the flour mixture, nuts and orange zest into a thick, sticky dough and let it rest chilled for 30 min.
  4. Using two moistened tablespoons, place mounds about 5 cm wide on a baking sheet lined with parchment paper and smooth into flat domes with the back of the spoon.
  5. Bake in a preheated oven at 170°C top/bottom heat for 15–18 min. until the edges are firm but the center still gives slightly – it will set as it cools.
  6. Stir the powdered sugar with the lemon juice and 1 tbsp water until smooth, brush thinly over the still-warm gingerbread, and store in a tin with a piece of apple to keep it soft.
