Gingerbread
Soft spiced gingerbread on wafers with honey, nuts and a citrus note, coated in a thin sugar glaze.

Ingredients · for 8 servings
200 g honey
100 g brown sugar
100 g butter
3 eggs
300 g flour
150 g ground almonds
100 g walnuts
2 tsp gingerbread spice
1 tsp baking powder
1 organic orange
1 pinch salt
150 g powdered sugar and 2 tbsp lemon juice for the glaze
Instructions
- Melt the honey, brown sugar and butter in a pot over low heat for 3–4 min. until clear, then let cool to lukewarm.
- Mix the flour, ground almonds, gingerbread spice, baking powder and salt, finely chop the walnuts and finely grate the orange zest.
- Stir the eggs one at a time into the lukewarm honey mixture, then work in the flour mixture, nuts and orange zest into a thick, sticky dough and let it rest chilled for 30 min.
- Using two moistened tablespoons, place mounds about 5 cm wide on a baking sheet lined with parchment paper and smooth into flat domes with the back of the spoon.
- Bake in a preheated oven at 170°C top/bottom heat for 15–18 min. until the edges are firm but the center still gives slightly – it will set as it cools.
- Stir the powdered sugar with the lemon juice and 1 tbsp water until smooth, brush thinly over the still-warm gingerbread, and store in a tin with a piece of apple to keep it soft.
