Ladotyri Lesvou Meze
Hard cheese from Lesbos aged in olive oil, cubed and dressed with oregano, pepper and lemon zest.

Ingredients · for 4 servings
300 g ladotyri (or aged kefalotyri)
5 tbsp olive oil
1 tsp dried oregano
1 organic lemon (zest)
1 tsp black pepper (coarsely ground)
100 g Kalamata olives
1 tbsp thyme honey
Instructions
- Take the ladotyri out of the fridge an hour before serving so its nutty aroma can fully develop.
- Trim off the rind thinly and cut the cheese into even 2 cm cubes.
- Finely grate the zest of the organic lemon and coarsely grind the pepper fresh so it still has aroma.
- Drizzle the cubes in a bowl with the olive oil and sprinkle evenly with oregano, pepper and lemon zest.
- Let stand at room temperature for at least 10 min. so the cheese absorbs the oil and spices.
- Arrange on a wooden board with the Kalamata olives, drizzle with the thyme honey and serve with bread as a meze with ouzo.
