Ground Beef Noodles

Ingredients · for 4 servings
400 g erişte (Turkish ribbon noodles)
400 g ground beef
2 onions
2 tbsp tomato paste
1 tsp paprika paste
50 g butter
2 tbsp olive oil
300 ml water
1 tsp Aleppo pepper
1 tsp salt
1/2 tsp pepper
Instructions
- Peel and finely dice the onions; set plenty of salted water to boil for the noodles.
- Heat the olive oil in a wide pan and fry the ground beef over high heat for 6–8 min. until crumbly, until the liquid has evaporated and the meat browns.
- Add the onions and fry for 5 min. until soft and golden, then stir in the tomato paste and paprika paste and roast for 1–2 min.
- Deglaze with 300 ml water, season with salt, pepper and Aleppo pepper and simmer uncovered for 8–10 min. until the sauce clings creamily to the meat.
- Cook the erişte in the boiling salted water for 8–10 min. until al dente, drain while reserving a cup of the cooking water.
- Toss the noodles with the butter in the pan, mix in the ground beef ragout, loosen with a little cooking water if needed and serve immediately.
