Ingredients · for 4 servings
300 g jasmine rice
500 g boneless chicken thigh
200 g shiitake mushrooms
1 piece ginger (4 cm)
5 garlic cloves
3 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
500 ml chicken stock
4 scallions
1/2 tsp white pepper
Instructions
- Cut the chicken into 3 cm pieces and marinate for 20 min. with soy sauce, dark soy sauce, oyster sauce, sesame oil, white pepper and the finely grated garlic.
- Wash the rice in cold water until it runs almost clear and drain well; quarter the shiitake and cut the ginger into fine strips.
- Put the rice and ginger strips into a clay pot or heavy Dutch oven, pour in the stock and stir once so the rice is evenly covered.
- Spread the marinated chicken with its marinade and the shiitake on top without stirring them in, and seal the pot tightly.
- Cook over low heat on the stove for 25–30 min. without lifting the lid; in the last 5 min. briefly raise the heat until it crackles softly at the bottom and a crust forms.
- Let the pot rest sealed for 5 min., open it, sprinkle with scallion rings and mix everything from bottom to top at the table so the crust comes along.
