Instructions

  1. Cut the chicken into 3 cm pieces and marinate for 20 min. with soy sauce, dark soy sauce, oyster sauce, sesame oil, white pepper and the finely grated garlic.
  2. Wash the rice in cold water until it runs almost clear and drain well; quarter the shiitake and cut the ginger into fine strips.
  3. Put the rice and ginger strips into a clay pot or heavy Dutch oven, pour in the stock and stir once so the rice is evenly covered.
  4. Spread the marinated chicken with its marinade and the shiitake on top without stirring them in, and seal the pot tightly.
  5. Cook over low heat on the stove for 25–30 min. without lifting the lid; in the last 5 min. briefly raise the heat until it crackles softly at the bottom and a crust forms.
  6. Let the pot rest sealed for 5 min., open it, sprinkle with scallion rings and mix everything from bottom to top at the table so the crust comes along.
