Instructions

  1. Check the grey mullet fillets for bones, divide into manageable pieces, salt, drizzle with the juice of half a lemon and chill for 10 min.
  2. Cut the scallions, including the light green part, into 2 cm pieces, roughly chop the dill and set the stems aside.
  3. Melt the butter and olive oil in a shallow pot and sauté the scallions over gentle heat for 4–5 min. until soft but still bright green.
  4. Add the dill stems and the water, bring to a boil once, then lay the fish pieces in side by side without stacking them.
  5. Close the pot and steam over the lowest heat for 8–10 min. until the fish is opaque and separates into flakes with a fork — do not stir during this time.
  6. Remove the dill stems, season with pepper, scatter the chopped dill over the top and serve immediately with wedges of the second lemon.
