Steamed Grey Mullet

Ingredients · for 4 servings
800 g grey mullet (fillet)
1 bunch scallions
30 g butter
3 tbsp olive oil
120 ml water
2 unwaxed lemons
1 bunch dill
Salt, pepper
Instructions
- Check the grey mullet fillets for bones, divide into manageable pieces, salt, drizzle with the juice of half a lemon and chill for 10 min.
- Cut the scallions, including the light green part, into 2 cm pieces, roughly chop the dill and set the stems aside.
- Melt the butter and olive oil in a shallow pot and sauté the scallions over gentle heat for 4–5 min. until soft but still bright green.
- Add the dill stems and the water, bring to a boil once, then lay the fish pieces in side by side without stacking them.
- Close the pot and steam over the lowest heat for 8–10 min. until the fish is opaque and separates into flakes with a fork — do not stir during this time.
- Remove the dill stems, season with pepper, scatter the chopped dill over the top and serve immediately with wedges of the second lemon.
