Golden Egg Yolk Threads

10 egg yolks
1 egg
500 g sugar
500 ml water
1 tsp orange blossom water
1 pinch salt
Instructions
- Gently whisk the egg yolks with the whole egg and the salt without creating foam, then pass through a fine cloth — only this way will the threads run evenly later.
- Cook the sugar and water uncovered in a wide pan for 8–10 min. into a thin syrup until it spins a light thread at about 105°C, and stir in the orange blossom water.
- Lower the heat so the syrup barely simmers — if it boils hard, the egg threads will snap right away.
- Fill the egg mixture into a piping bag with a very fine tip and draw thin streams over the syrup in slow circles.
- Lift the threads off with two wooden sticks after 30–40 sec., once they're firm and glossy, and drain on a rack; keep going until the mixture is used up.
- Gather the drained strands into small nests and serve lukewarm or cold with tea.
