Egg Bhurji Pav
Spicy Mumbai scrambled eggs with onions, tomato and chili, served with soft pav buns toasted in butter.

Ingredients · for 4 servings
8 eggs
2 onions
2 tomatoes
2 green chilies
1 tbsp grated ginger
1 tsp Kashmiri chili powder
1/2 tsp garam masala
1/2 bunch cilantro
8 pav buns
60 g butter
2 tbsp vegetable oil

Instructions
- Finely dice the onions and tomatoes, cut the chilies into thin rings and chop the cilantro; whisk the eggs with 1 tsp salt.
- Heat the oil in a wide pan and fry the onions with ginger and chilies over medium heat for 5 min. until soft and light brown.
- Roast the chili powder in for 30 sec., then add the tomatoes and simmer for 4–5 min. until the mixture is thick with no liquid left.
- Pour in the eggs and stir slowly with a spatula over low heat for 3–4 min. until they set but remain glossy and moist – do not let them dry out.
- Fold in the garam masala and half the cilantro and remove the pan from the heat.
- Split the buns, toast in the butter for 1 min. per side until golden brown and serve immediately with the scrambled eggs, remaining cilantro and onion rings.
