Ingredients · for 4 servings
800 g ripe tomatoes
250 g long-grain rice
1 onion
2 cloves garlic
80 ml olive oil
1 tbsp tomato paste
1/2 bunch mint
1 tsp sugar
400 ml vegetable stock
Salt, pepper
Instructions
- Halve the tomatoes and grate them on the coarse side down to the skin, discard the skins; finely dice the onion and finely chop the garlic.
- Heat the olive oil in a wide pot and sweat the onion with the garlic over medium heat for 5 min. until translucent.
- Stir in the tomato paste and cook for 1 min., then add the grated tomatoes with sugar, salt and pepper and simmer uncovered for 8–10 min. until the mixture thickens noticeably.
- Stir in the rice, mix briefly and pour in the hot vegetable stock.
- Cook covered over low heat for 18 min. without lifting the lid, then remove from the heat and let steam for 5 min.
- Fold in the finely cut mint, drizzle with a splash of olive oil and serve warm or lukewarm as a main course or side dish.
