Ingredients · for 4 servings
8 ripe tomatoes
3 green pointed peppers
3 garlic cloves
5 tbsp olive oil
1 tsp Aleppo pepper
1 tsp dried oregano
1 tsp salt
1 bunch parsley
1 flatbread
Instructions
- Score the tomatoes crosswise at the stem end, drop into boiling water for 30 sec., shock in cold water, peel and roughly dice.
- Wash the pointed peppers, seed them and cut into 1 cm wide strips; cut the garlic into thin slices.
- Heat the olive oil in a wide pan over medium heat and fry the peppers for 5–6 min. until soft and browning at the edges.
- Add the garlic and cook for 1 min. until fragrant but still pale.
- Add the tomato cubes with salt, Aleppo pepper and oregano and simmer uncovered over medium heat for 12–15 min. until the liquid has evaporated and the oil separates clearly at the edge.
- Sprinkle with chopped parsley and serve straight from the pan with fresh flatbread for dipping.
