Instructions

  1. Soak the raisins in warm water for 10 min., drain, and pat dry; preheat the oven to 180°C and grease a 24 cm pan with olive oil.
  2. Thoroughly mix the cornmeal, flour, sugar, baking powder, cinnamon, salt, and the grated zest of the organic orange in a bowl.
  3. Pour in the olive oil and orange juice, stir until smooth, and fold in the raisins – the batter is thick and falls heavily off the spoon.
  4. Pour it into the pan, smooth the top, and bake for 40–45 min., until the surface is deep golden brown and a skewer comes out clean.
  5. Meanwhile, boil the sugar for the syrup with the water and the orange juice vigorously for 5 min., and let it cool completely.
  6. Cut the warm bread into diamonds, pour the cold syrup evenly over it, and let it soak for 30 min. before serving.
