Bobota (Corn Bread)
A moist corn bread with olive oil, orange juice, and raisins, soaked in orange syrup after baking.

Ingredients · for 8 servings
300 g cornmeal
100 g flour
150 g sugar
120 ml olive oil
250 ml orange juice
100 g raisins
1 packet baking powder
1 tsp cinnamon
1 organic orange
150 g sugar for the syrup
200 ml water
1 pinch salt
Instructions
- Soak the raisins in warm water for 10 min., drain, and pat dry; preheat the oven to 180°C and grease a 24 cm pan with olive oil.
- Thoroughly mix the cornmeal, flour, sugar, baking powder, cinnamon, salt, and the grated zest of the organic orange in a bowl.
- Pour in the olive oil and orange juice, stir until smooth, and fold in the raisins – the batter is thick and falls heavily off the spoon.
- Pour it into the pan, smooth the top, and bake for 40–45 min., until the surface is deep golden brown and a skewer comes out clean.
- Meanwhile, boil the sugar for the syrup with the water and the orange juice vigorously for 5 min., and let it cool completely.
- Cut the warm bread into diamonds, pour the cold syrup evenly over it, and let it soak for 30 min. before serving.
