Aşure (Noah's Pudding)

Noah's pudding of wheat, chickpeas, beans, dried fruit and nuts, simmered long and meant for sharing.

Instructions

  1. Soak the wheat, chickpeas and white beans separately overnight in plenty of cold water, then drain and rinse each the next day.
  2. Boil the chickpeas and beans in separate pots for 45–60 min. each until tender, then rub the chickpeas between your fingers to remove the skins so the pudding stays smooth.
  3. Bring the wheat to a boil in 2 l water and simmer gently for 60 min. until the grains burst and the liquid becomes creamy and milky; add hot water as needed.
  4. Add the chickpeas, beans, sugar, raisins and the finely cut apricots and simmer uncovered for another 20 min., stirring occasionally, until the mixture binds like a pudding and coats the spoon.
  5. Remove from the heat, stir in the rosewater and ladle the aşure hot into bowls – it thickens noticeably and becomes firmer as it cools.
  6. Let cool completely and top in a ring with chopped walnuts, pistachios, shredded coconut and pomegranate seeds.
