Açma (Soft Sesame Rolls)

Soft yeasted rings made from a milk-and-butter dough, rolled in sesame seeds and baked golden brown.

Instructions

  1. Warm the milk until lukewarm, dissolve the yeast and sugar in it and let sit for 10 min. until a foamy crown forms.
  2. Add the flour, salt, 1 egg and 60 g softened butter and knead for 8–10 min. into a soft, smooth dough that pulls away from the bowl; let rise covered for 60 min. until doubled in size.
  3. Mix the remaining butter with the oil; divide the dough into 12 pieces and roll each into an oval flatbread about 20 cm long.
  4. Brush each flatbread thinly with the butter-oil mixture, roll up tightly from the long side, close the strand into a ring and press the ends firmly together.
  5. Place the rings on a baking tray lined with parchment paper, brush with the beaten second egg, roll in sesame seeds and let rise again for 30 min.
  6. Bake at 180 °C for 22–25 min. until golden brown and dry on the underside, let cool to lukewarm on a rack and serve fresh with breakfast tea.
